  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala

  • Salt to taste
  • 2 tbsp lemon juice
  • 2-3 green chilies, slit (optional)
  • Fresh coriander leaves (cilantro), chopped
  • Fresh mint leaves, chopped

For the Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1 bay leaf
  • 2-3 green cardamom pods
  • 1 cinnamon stick

  • 2 medium tomatoes, chopped
  • 1/2 cup cooking oil or ghee

Step 1: Marinate the Chicken

  2. Add the marinated chicken and cook on medium heat for 10-15 minutes, stirring occasionally.
  3. Add tomatoes and cook until the oil separates from the mixture.
  4. If using biryani masala, add it now and mix well. Cook for another 5 minutes.

Step 4: Layer the Biryani

  1. In a heavy-bottomed pot or Dutch oven, spread half of the partially cooked rice as the first layer.
  2. Add the chicken gravy mixture on top of the rice.
  3. Sprinkle fried onions, chopped coriander, and mint leaves over the chicken.
